To dedicate one's life to the mere perfection of a single task may first appear like a seeming waste of an entire existence, but for one Jiro Ono, this rudimentary conquest is a just purpose. Jiro's goal? To perfect the culinary art of making the most ideal sushi possible. Using a combination of traditional techniques with methods learned along the way in his over 70+ years of experience, Jiro's mind is of complete soundness with a calm and principled attitude toward his work. In 1965, Ono would go on to open his now famed sushi restaurant Sukiyabashi Jiro where'd he'd operate as head chef for the small dining establishment, located in Ginza, Tokyo. Featuring only 10 seats and located in an unsuspecting location underground near a train station, Sukiyabashi Jiro embodies the same simplicity as its owner and longtime head chef. No grandiose presentation or culinary pretentiousness. Just the bare minimum to serve the perfect sushi. In his life's work, Jiro has managed to land Sukiyabashi Jiro with three Michelin stars with many in the food world considering his preparation as indeed the very best in the entire world. Jiro has also gone on to even serve famed guests from Anthony Bourdain to Barack Obama! In this video produced just last year by YouTuber AJsimmons, the operations of Sukiyabashi Jiro can be closely observed with Jiro's son Yoshikazu taking over as new head chef. For a more intimate observation of Jiro himself and his own personal process, the award winning documentary Jiro Dreams of Sushi (2011) directed by David Gelb provides the most comprehensive look at quite possibly the most esteemed sushi chef in modern history.
